Ingredients:
4 medium size potatoes
1/2 tsp turmeric powder
1/2 tsp red chilli powder
1 tbsp coriander powder
1 tbsp masala of your choice
Salt to taste
oil for frying
10 curry leaves
3 big dry red chillies
How to make Aloo Dry

How to make Aloo Dry
- Cook the potatoes in a cooker. Keep it aside.
- When the potatoes have cooled down, peel and cut into cubes.
- Heat oil in a pan and put the potatoes in it. Stir.
- Now add turmeric powder, chilli powder, coriander powder and masala of your choice and stir well. Add salt.
- Sprinkle water and stir well.
- When it becomes dry, add 2 tsp oil and fry again in a low flame.
- In another small pan add oil and put the chillies in it.
- Add the curry leaves and stir.
- Add the seasoning to the aloo masala and remove from fire.
- Aloo fry is ready.
- Remove to a serving bowl and serve with chapathis or pulao.
- Garnish with coriander leaves or cashews nuts.
