The plain steamed rice is consumed all over India. Apart from that the northern part of India also cooks the rice along with the vegetables and spices. As inPulav,Biryani.
These rice-recipes areeasy to make. Many of them are good as aone dish mealtoo.
So when you make them you do not need to spend time in planning and making any accompanying dishes.
The Southern States consume more rice and have their own very tasty varieties. In some the rice is cooked first and then mixed with different vegetables and spice mixes. As in tamarind rice, lemon rice, tomato rice etc.Mango rice in the left image is one of them.
In others the rice is cooked along with vegetables and spices. And all of them are really very tasty. There is also thekhichadiwhich is easy to digest rice dish served to a sick person. Even in that there are many recipes.

We havesteamed rice or plain rice(eaten with lentil curries), spicy rice,sweet rice, sour rice etc.

The variety of rice used is also important.Basmati riceis a long grained rice and has a good delicate flavor. It breaks easily too. It is used to make a variety of pulavs, biryanis, Jeera Rice etc.
Short grain rice is used more in the southern states. It is used when the rice is cooked first and then mixed with vegetables and spices as it doesn't break easily.
It is used in curd rice,Vegetable Fried rice, Tamarind rice,Lemon rice,Tomato rice,Mango Rice.
